Hervé sits on Trion Ierarchon in Ano Petralona, behind an unmarked door. Book, and a four-digit code arrives with the confirmation. Inside is a counter around an open kitchen and a patio, a fourteen-course menu from the French chef Hervé Pronzato, and no other way to eat.
Why it is on this list
Because the coast’s two starred kitchens are both on a hotel peninsula and both are, in the end, rooms with a view of the Saronic Gulf. This is a chef’s room with no view at all, which is a different evening and a different reason to leave the house.
It is also buyable. One to six guests, and the restaurant can be taken over — which for a family entertaining somebody they actually need to talk to is worth more than a terrace.
What to check before you book
The dietary restrictions, because they are unusually firm and the restaurant publishes them rather than hiding them. And the day: closed Sunday and Monday, which catches out anyone treating it as a weekend option.
